Spiced Fig Jam With Orange

1½ kg figs chopped finely,the grated zest and meat (chopped finely) of 3 oranges,500 g sugar,juice of 2 lemons,1 tsp grated fresh ginger,1 tsp ground clove,2 tsp ground cinnamon,1 package Gelfix Super 3:1


Put the fruits, spices, grated zest, lemon juice into a big preserving pan. Incorporate the gelfix and 1-2 tablespoon of sugar and stir well into the fruit. Bring to the boil and simmer for 2-3 minutes. Add the sugar, stir and simmer for another 2-3 minutes. Pour the jam into little jars and cover.
