Submitted by Anastasia 29 July 2009
This is very easy to make , & will keep for a long, long time.
Ingredients
3Lbs redcurrants.1 medium onion, 2 large cooking apples
1Pt vinegar(I tend to use red wine vinegar for this), but distilled will be fine.
12 ozs Sugar
8 ozs Raisins.
1Tsp of the following, salt , allspice, Cinnamon, & ground cloves.
Small pinch of nutmeg.
1/
Method
peel & core the apple , & cut up small.Put all the ingredients in to a pan with the exception of the raisins. Bring slowly to the boil making sure that all the sugar is disolved. This will take around 30 to 40 mins to thicken.as it starts to thicken add the raisins in the last 5 to 10 mins of cooking. Put in warm jars , & store in a cool , dark place. It is best kept for at least a month before using , 3 months is even better.Recipe images are not uploaded yet.
