Red Onion Jam Marmalade

Use as a Chutney - ideal in sandwiches, with cold meats, cheeses and salads.



120 ml Sunflower Oil,700g of Red Onions - finely sliced,175g Caster Sugar,150 ml Sherry Wine Vinegar ,2 Tablespoons of Grenadine Cordial ,250 ml Red Wine,1 teaspoon of salt,1 teaspoon ground black pepper,,NB - Wine or Cider Vinegar work equally well,Grenadine cordial can usually be found in the spirits aisles.


Heat the oil in a wide shallow pan, then add the onions, sugar, salt and pepper.
Cook gently for 30 mins, stirring occasionally, until most of the liquid has evapourated
Add Grenadine, wine and Vinegar
Continue to cook uncovered at a gentle simmer for a further 30 mins, stirring regularly until reaches consistency of jam.
Pot in sterilised jars and store in cool dark place for up to a year.
I use small jars, as is very rich and you don't need much.
