Pumpkin Marmalade

Use as per all Marmalade.



3 lbs 5 oz prepared and sliced pumpkin,1 3/4 pints of water,1 1/2 lbs Oranges - halved and sliced thinly,1 1/2 lbs Lemons - halved and sliced thinly,3 oz root ginger - finely chopped or shredded,3 lbs Sugar


Place the pumkin, oranges, lemon, ginger and water in a pan.
Bring to the boil and simmer for 45mins - 1 hour, until the peel is very soft.
Add the sugar,
Dissolve the sugar and bring back the boil.
Cook on Medium heat until the the mixture is thick enough for a wooden spoon to be drawn through the centre and leave a clear channel.
Poor the marmalade into clean sterilised jars, label and store.
