Pineapple & Ginger Jam

This has apple in it to ensure it sets, but the over-riding flavour is pineapple and ginger. I have also made it with a big tin of pineapple too.
Ingredients
2lb cooking apples (prepared weight)
1 fresh pineapple, peeled, cored & chopped (or a large tin)
2 lb. sugar
about 8 balls preserved ginger, chopped
Method
Peel & slice the apples. If using tinned pineapple, cook the apple in the drained juice until soft and then add the chopped pineapple, ginger & sugar. Stir to dissolve, bring to a rolling boil and boil approx. 10 mins. to set. (If using fresh pineapple, cook it and the apples in about 1/2 pt. water until soft, then carry on as above. NB. Watch it doesn't catch on bottom of pan.Recipe images are not uploaded yet.
