Onion Puree for Curry and Balti Dishes

Use When cooking Curry Balti Dishes



3lbs Onions (Large Spanish if Possible),Water to Cover,1tsp salt


Coarsely chop the onions, put in a large saucepan
Add salt and cover with water and bring to the boil
Simmer for 15mins, until soft
Drain the onions and blitz ina food processor together with a little of the water
Keep the remaining water to use as stock?water when making the Balti.
Can be frozen but may lose a little pungency after a whil
