Mint Jelly.

Crab apples about 4 lbs,Enough water to just cover the fruit.,Handfull of mint ,Sugar ,Green food colouring(Optional)


Wash the apples, & put in a pan , with a some mint, just cover with water, then cook until soft around 30 mins.
Drain through a jelly bag.Leave to drip overnight.
For every 3/4 pint of apple juice add 1 lb of sugar. Bring very slowly to the boil, & cook until setting point is reached.
Add some finely chopped mint , & a hint of green food colouring if used, then put in jars & seal.
