Lime and Kiwi Marmalade

This is a fantastic very quick maramalade recipie that you can rustle up very quickly using the microwave. it will store well in the fridge for about a week. Once you have tried this you will make it a regular favorite!
Ingredients
- 4 Kiwis, peeled
- 170 grams sugar
- 2 tsb lime juice
- zest of 1 lime
Method
Quarter the kiwi lengthwise, and then cutinto 1/2-inch cubes.
Combine the kiwis with lime juice, zest and sugar in a deep microwave safe casserole dish, and mix well.
Cook, uncovered, at full power (650 to 750 watts) for 5 minutes. Stir, return to the microwave, and cook until thick, another 6 minutes.
allow to cool to room temperature; then cover tightly and refrigerate. It will keep for 1 week in the refrigerator.
