Lemon mincemeat

Makes wonderful mince pies.
Ingredients
3 Lemons,1 lb Cooking Apples,4 oz Polyunsaturated Margarine,1/4 pt Brandy,8 oz Brown Sugar,16 oz Mixed Fruit,1 tsp each of Ground Ginger Ground Nutmeg Ground Cloves.,
Method
Peel lemons with potato peeler and simmer rind for approx 6 mins or until soft. Chop rind and mix with sugar in bowl, grate apples and add to dried fruit, mix well. Add margarine and spices, add juice of lemons and brandy. Stir well and pack into clean jars and cover. Keep until needed.Recipe images are not uploaded yet.
