Hot Broccoli Dip (Pampered Chef recipe)

Serve this delicious dish with potato wedges (or similar) to dip.



1 cup fresh broccoli florets chopped (about 6 oz);,2 tbsp chopped onion;,2 tbsp chopped red pepper;,1 oz grated parmesan cheese;,1 crushed clove garlic;,4 oz shredded cheddar cheese;,1/2 cup fat-free mayonnaise,1/2 cup fat-free sour cream/creme fraiche,1/8 tsp ground black pepper


Preheat oven to 375F.
Whiz broccoli, onion & red pepper in food processor. Place in a bowl. Grate Parmesan & add 2 tbsp to veg mixture. Then add garlic & other ingredients, mixing well.
Spoon into a small casserole dish. Bake 20-25 mins or until heated through.
Sprinkle remaining 2 tbsp Parmesan over the top.
