Grans Pickle

Cannot say amounts are exact as original recipe as written by Gran is rather haphazard !  Use your own preferences but do not skimp on the sugar - it really must be dark brown muscavado.




Dice: -

9ozs. Carrots, Small Cauli., Small turnip, Medium Swede.

Finely chop:-

5-10 cloves of Garlic, 2 Onions,2 Eating  Apples, 2 Courgettes or a bit of Marrow, 20 small Gherkins.


10ozs. Dark Muscavado Sugar, 4tblsp. Lemon juice,Salt, 3/4pt. Malt Vinegar.


2tsps. Mustard Seed, 2tsps. Allspice. Mix with a tsp. or so of Cayenne.




Into pan, a good stir, up to the boil and simmer for about 2 hours.Stir again. Pot as usual.

Keep for a month or so.
