This is best made with jam sugar as it is hard to set
Ingredients
2lbs figs,
2lbs jam sugar,
juice of 2 lemons+ the very fine rind of 1.
Method
Peel the figs , & cut into small pieces.Put the figs , lemon juice & rindin a pan , & simmer until soft , (about 20 to 25 mins) Add the sugar & stir over a low heat until dissolved, then bring to a rolling boil. make sure you stir often as the seeds do tend to stick to the bottom of the pan.Rub a little butter on the base of the pan before you start, this helps. If using jam sugar a set should take just 10 to 15 mins. If you do not want all the seeds in the jam then push the mixture through a sieve BEFORE you add the sugar.Recipe images are not uploaded yet.
