Elderberry Chutney

Ideal with cold meats and cheeses

 
 
 
 

Ingredients

2 Pints Elderberries - no stalks,1/4 lb seedless raisins,1/4 lb sugar,2 oz onions - finely chopped,1/2 oz salt,pinch of cayenne,pinch of allspice,1 Pint vinegar,

Method

Put one-third of the vinegar and all of the ingredients, except the sugar in a pan and simmer until thick.
add the second one-third of the vinegar in the pan and simmer until thick.
Add the rest of the vinegar and the sugar, simmer until thick.
(Chutney is ready is no liquid is visible when a wooden spoon is drawn through the mixture).
Pot and cover
N.B - I think I would be inclined to put the raisins and onions through a mincer or blitz in the food processor.
