Cucumber Pickle

A lovely crispy (how does it go crunchy!?) side salad.

 
 
 
 

Ingredients

  • 300g Cucumber. un-peeled and sliced thinly,

1 small onion sliced thinly,

125g sugar,

good pinch/1 tspn salt,

75ml cider vinegar OR white wine vinegar

Method

Mix the cucumber and onion in a bowl
Add sugar, salt and vinegar and mix well. Leave for 1hr to enable flavours to develop.
