Christmas Mincemeat ( in a slo-cooker )

Ingredients

1 lb cooking apples, 4 oz glace citrus peel, 4 oz glace cherries, 4 oz ready to eat dried apricots, 4 oz blanched almonds,quarter pint brandy, 8 oz currants, 8 oz sultanas, 1 lb seedless raisins, 8 oz soft dark brown sugar, 8 oz suet, 2 tsp. ground ginger, 1 tsp. ground allspice, 1 tsp. ground cinnamon, half a tsp. ground nutmeg,Grated rind and juice of 1 lemon,Grated rind and juice ot 1 orange

Method

(1) Peel, core and chop the apples, then roughly chop the citrus peel, glace cherries, apricots and blanched almonds
(2) put all these ingredients into slo-cooker along with half of the brandy, stir well until thoroughly mixed
(3) put lid on cooker and cook for 1 hour on high
(4) stir the mixture well, turn the cooker down to low, cook for a further 2 hours stirring half way through, to prevent from sticking to the sides of the pot
(5) remove the lid and leave the mixture to cool completely, stirring occasionally
(6) Stir in the rest of the brandy and spoon the mixture into sterilzed jars, cover and you can store in a cool place for up to 6 months, onced opened store in a refrigerator
and use within 2 weeks.
