Ingredients
3 kg Blackberries,150ml water,3kg Sugar,,either---,Juice of 2 lemons or,1 teaspoon citric acid or,300ml apple pectin stock.
Method
Hull and pick over the blackberries, rinse and drain well.put in a pan with the water, and lemon juice, or citric acid.
simmer until the blackberries are soft, then add the sugar (and the pectin stock, if using) stir until dissolved.
boil rapidly until setting point has been achieved.
jar into warm sterilsed jars.
