Apricot , & Nectarine jam
This is very easy to make , & sets pretty fast. Such a beautiful colour. Use fruit that is ripe.When cooking the jam you can use a plastic potato masher if the pieces of fruit are too big. Do this if necessary when setting point has
MethodRemove the stones from the fruit by placing in boiling water for up to 2 mins. Remove the rind from the lemons , & chop up very fine.Chop the fruit. Juice the lemons. Add the fruit , rind, & sugar & juice to the pan , & slowly bring to the boilmaking sure that all the sugar is dissolved before increasing the heat to bring the contents to a rolling boil. After about 15 mins check for setting point.I find this easy to set.
