Apple Ginger Jam

This is from an old M & S "Home Preserves" recipe book. I haven't made it yet but thought it could be useful for those with an apple glut! Recipe says it makes about 7 lbs.
Ingredients
4 lb. cooking apples, peeled & sliced
1.5 pts. water
2 lemons, grated rind & juice
1 oz. root ginger, peeled
3.5 lbs. sugar
4 oz. preserved ginger, finely chopped
Method
NB: I am not sure whether recipe refers to 4lbs. weight apples before preparation, or after. I think it's before. Put sliced apples, lemon rind & juice, water & root ginger into preserving pan. Root ginger can either be bruised & tied in muslin, or v.finely chopped & added. Simmer gently until apples are soft. Add the preserved ginger & the sugar & heat gently, stirring, until sugar is dissolved. Bring to boil and fast boil until setting point is reached. Remove scum, cool slightly before pouring into jars.Recipe images are not uploaded yet.
