Apple Ginger Jam
This is from an old M & S "Home Preserves" recipe book. I haven't made it yet but thought it could be useful for those with an apple glut! Recipe says it makes about 7 lbs.
MethodNB: I am not sure whether recipe refers to 4lbs. weight apples before preparation, or after. I think it's before. Put sliced apples, lemon rind & juice, water & root ginger into preserving pan. Root ginger can either be bruised & tied in muslin, or v.finely chopped & added. Simmer gently until apples are soft. Add the preserved ginger & the sugar & heat gently, stirring, until sugar is dissolved. Bring to boil and fast boil until setting point is reached. Remove scum, cool slightly before pouring into jars.
