turkey and chocolate casserole

serve immediately, serves 4



2 ozs plain flour salt and pepper, 4 turkey breast fillets, 3 tbsp corn oil, 1 onion thinly sliced, 1 red pepper deseeded and sliced, 10 FL ozs chicken stock, 1 oz raisins, 4 tomatoes peeled deseeded and chopped, 1 tsp chilli powder, half tsp.ground cinnamon, a pinch ground cumin, 1 oz good quality plain chocolate finely chopped or grated


preheat oven gas mk. 3
coat turkey with seasoned flour, shake off any excess.
heat oil in a flameproof casserole add the turkey fillets and cook over a medium heat, turn occasionally for 5-10 mins or until golden. transfer to a plate using a slotted spoon.
add the onion and red pepper to the casserole. cook over a low heat, stir occasionally for 5 mins or until softened, sprinkle in any remaining seasoned flour and cook, stirring constantly, for 1 min. gradually stir in the stock, then the raisins, chopped toms., chilli powder, cinnamon, cumin and chocolate season to taste, bring to the boil, stirring constantly.
return the turkey to the casserole, cover and cook in the preheated oven for 50 mins.
