cheesy chicken and bacon

I read so many cookery books that this recipe is a mixture of all the bits I like. I have told friends about this and they say it's the easiest and tastiest dish they have made in a long time.



skinned chicken breasts (1 per person), pesto, mozarello cheese, bacon (1 rasher per person), tin of ratatouile


Slice chicken breast almost in half sideways and spread a teaspoon of pesto inside. Place a couple of pieces of cheese on top of pesto and then fold back into place. Put them in an ovenproof dish and put a rasher of bacon on each one; then pour the ratatouille all around. Cook in a med oven for about 30-40 mins.
