bulghar wheat & butternut squash bake

Ingredients

1tbsp olive oil,1 onion chopped,1 pepper sliced,1 butternut squash in 2 inch cubes,1 packet vacuum packed chestnuts,tin chopped tomatoes,equivalent volume in red wine,cup bulghar wheat,1 tbsp paprika,1tsp each mixed herbs & cumin,2 cloves chopped garlic,salt & pepper,cheese to top if preferred - grated cheddar or feta works equally well

Method

1. fry onion in little olive oil. Add pepper & cook for a few mins
2. Add paprika, garlic, mixed herbs,cumin. S&P
3. Add butternut squash & fry for a couple more mins
4. add tin chopped tomatoes & an equivalent volume in red wine
5. cook until squash is slightly still under-done
6. Add chestnuts
7. Add cupful of bulghar wheat & cook until the liquid is absorbed (about ten mins) - might need to add a bit of water
8. you could eat this straight away but I have also put it in a casserole dish & topped with cheese.
I serve it with salad & garlic bread
