braised danish bacon joint in a slo-cooker

Ingredients

2 lb danish bacon joint ( prime collar or gammon ), 1 tbsp. brown sugar, 8 oz tomatoes skinned and coarsely chopped, 8 oz onions finely chopped, black pepper, 4 oz mushrooms sliced, 2 tbsp lemon juice, chopped parsley

Method

preheat slo-cooker on high
place the bacon in a large pan and cover with cold water. Bring to the boil, then pour the water away. Cut off the rind and snip into the fat at intervals. Sprinkle the joint with brown sugar and place under preheated grill to melt and brown.
Arrange the toms. and onions in layers in the slow-cooker. Season with black pepper and add the water.
Place the browned joint on top.
cook on high for 3-5 hours
In a separate pan cook the mushrooms in a little water with lemon juice for about 3 mins, drain and use to garnish the dish. Sprinkle chopped parsley over.
