beef stew with olives

Lovely served with roast potatoes and green veg.

 
 
 
 

Ingredients

3ib shin of beef,Seasoned flour,1 large onion,1 large carrot,olive oil,2 garlic cloves,1/4 red wine,1 pint beef stock,Bouquet garni,tsp chopped anchovies,seasoning,4-6oz black/green olives,chopped parsley

Method

Remove and skin or fat from beet. Cut into 1 chunks and coat in flour.
Peel and finely slice onion carrot and garlic.
Heat oil in pan, when hot fry meat and veg until brown.
Transfer to a casserole.
Pour wine and a little stock into frying pan. Boil rapidly scraping all the residue.
Add to casserole.
Add stock to cover meat.
Add bouquet garni and anchovies.and season.
Cover and simmer at 150C/gas 2 for 2-3 hrs until meat is tender.
Remove meat and veg, keep warm. R.educe liquid until it has become a rich sauce.
Remove bouquet garni.
Add olives and simmer for 5 mins.
Pour sauce over meat and veg.
