african sweet potato stew

serve with rice



1 peeled chopped onion,60ml groundnut oil,2 garlic cloves peeled and crushed,10ml fresh grated ginger,1.25ml cayenne pepper,350g sweet potato peeled and chopped into cubes,15 curry paste ,300ml pasata or 400ml can of chopped toms[mashed],300ml veg stock,225g spinich trimmed if using frozen defrost and dry well,225g button mushrooms,60ml peanut butter,30ml chopped coriander,salt and pepper,coriander sprigs to garnish


fry onion gingergarlic cayenne in 3/4 of the oil for 10 mins. Add curry paste and stir well for 1 min.Add sweet pots and coat in the mixture and fry for 4/5 mins.Add passata and stock bring to the boil cover and simmer for 15-20 mins til the pots are almost tender.
Roughly shred the spinach leaves . Heat remaining oil and stir fry the mushroom for 4/5 mins add to the pots with the spinach and cook for approx 5 mins and the veg are cooked .Add a few sponn of the stew liquid to the peanut butter to soften it slightly then stir it back into the pan with the coriander. season to taste.
