Viceroy Curry

Serves 2. Perfect with turmeric flavored rice and a nice raita.



- 2tbs sunflower oil,- 1 large onion (thinly sliced),- 2 tsp garlic (minced),- 225g chicken breast cut into smallish cubes,- 1tbs curry paste,- 120ml chicken stock,- 1 block of creamed coconut,- 1 small jar of mango chutney,- 1/2 l


- Heat the oil and gently fry onion. When beginning to go soft add garlic.
- When the onions are soft add the chicken and cook until just sealed.
- Add curry paste and cook for another minute.
- Pour in stock and bring to a fast boil.
