*The* Chicken Balti

Serve with Naan Bread, Raita(Yoghurt ,cucumber and Mint, Tomato and Onion with coriander and a slice of Lemon to squeeze on (my preference)



1 1/2 lbs skinless boneless cubed chicken/turkey,2 1/2 fl oz oil (not Olive Oil),1 tsp chopped garlic,1 tsp chopped ginger,1 tbsp tomatoe puree,1 tbsp natural greek yoghurt,1 Portion of Balti Sauce (see recipe in profile),1 tbsp if Balti Powder (recipe in profile),salt and pepper to taste,1 good pinch of Methi Leaves,1/2 chopped onion,1tbsp Garam Masala,1/4 chopped green pepper,1 tomato cut into quarters,1 Tbsp fresh Coriander leaves chopped,Whole Coriander leaves and Garam Masala to garnish,


Put the chicken into a wok with 2-3 tbsps ofoil and stir fry for 2-3 minutes until the meat is sealed. Remove with slotted spoon
Add 2-3 tbsps oil into wok and stir fry the ginger and garlic in the oil, add chopped onion
Put the chicken back into the wok with the Balti Powder and Tmato Puree. Stir Fry for 30 seconds
Take the wok off the heat and add yoghurt slowly, bit by bit into the side of the wok and then stir in. Return to the heat and stir fry.
Now add the Balti Base Sauce and enough onion water/stock to maintain a thick gravy consistency. Add the salt and pepper to taste. Add Methi Leaves and green pepper
Simmer until the chicken is cooked (about 10-15mins). Just before serving add the Garam Masal, Chopped Coriander and Tomatoes
Serve sprinkled with Fresh Coriander Leaves and Garam Masala.
