TOMATO AND CHIVE TART

Chuck on some chopped chives if you like, and serve in big squares, warm or cold with a green salad.

 
 
 
 

Ingredients

340G PACK SHORTCRUST PASTRY,200ML TUB CRÉME FRAÍCHE FULL OR HALF FAT,2 EGGS,2 TBSP PESTO GREEN OR RED,6 RIPE TOMATOES SLICED,225G/8OZ CHERRY TOMATOES HALVED,SNIPPED FRESH CHIVES (OPTIONAL),GREEN SALAD TO SERVE,

Method

Preheat the oven to 220C/gas7/fan 200C. Roll out the pastry and use to line the base and sides of a Swiss roll tin (about 23x33cm). Mix the creme fraiche, eggs and pesto then season with salt and pepper. Pour this creamy mixture over the pastry. Scatter both kinds of tomato on top, then season and bake for 20 minutes until set.
