Shoulder of Lamb-a la Jamie Oliver

Serve with roast potatoes and vegetables in season.

 
 
 
 

Ingredients

I shoulder of lamb-British especially Dorset is best!,8 garlic cloves; 6 sprigs of rosemary; olive oil salt and pepper.,Large roasting tin ideally with a tight fitting lid or a double layer of foil to cover.

Method

Turn oven to maximum temperature before you start.
Pour a few drops of olive oil in the base of the roasting tin. Crush garlic cloves witha rolling pin and place in tin with the rosemary. Put a few more drops of olive oil on lamb and rub all over. Season the lamb with salt and pepper. Put in tin, cover with lid or foil and place in oven.
Immediately turn oven down to 170C and cook for four hours, without opening tin.
At end of cooking time, remove lamb from tin and allow to rest for at least twenty minutes. Discard herbs and oils in tin.
