Salad of Scallops with Macadamia Nuts

Tastes just as good without the cheffy serving suggestion, but if you trying to impress be my guest!

 
 
 
 

Ingredients

24 scallops,100ml groundnut oil,2 shallots peeled and chopped,Fresh thyme,bay leaf,zest of one lemon,SALAD,mixed salad leaves,1 chopped shallot 125g macadamia nuts,40ml vinaigrette mad with macadamia nut oil,1 green apple peeled cored and quartered,1/2 tsp caster sugar,juice of 1/2 lemon,4 new potatoes cooked and thinly sliced,salt and pepper

Method

Put scallops in a shallow dish, pour over the oil and add the sahllots, garlic and herbs. Cook the lemon zest in a pan of boiling water for 5 mins. Cool under cold water, dry with kitchen paper and add to the scallops.
For the salad, place the leaves, shallots and nuts in a bowl and sprinkle with the vinaigrette. Toss well.
Cut the apple intin matchsticks, put in a bownland sprinkle with the sugar and lemon juice. Coat the apple in the juice, then spoon on to serving plates,making a mound in the middle.
Cover the apple with the slad leaves. Pick out the nuts and arrange around the plates with 5 potato slices on each.
Lift the sallops from the dish and spoon a little of the marinade into a large frying pan. When hot fry scallops 1-2mins of each side until lightly browned. Place a scallop on each potato slice, season and serve.
