Roasted John Dory

A medium-sized fish serves 4



1 whole John Dory or sea bream medium sized,1 tbs Portuguese olive oil,2 tbs Portuguese white wine,Maldon salt,


One hour before you are going to cook the fish, put it in a roasting tin, salt liberally with Maldon salt. Leave to take on the salt in the fridge.

Pre-heat the oven to 180°C (if using fan oven, don't pre-heat). Take the fish out of the fridge and drizzle with the olive oil and the white wine. This makes a delicious sauce.

Put the fish in the oven and let it cook for 30-40 minutes (depending on the size of the fish, and whether you pre-heated the oven or not). Baste the fish with the cooking liquid once or twice during cooking.

Serve with roasted potatoes and cauliflower, or any other vegetable you like. When serving the fish, spoon some of the sauce over the individual portions on the plates. Delicious!
