Pot Noodle

You can easily double up the quantities to make more and it freezes well too. Suitable for vegetarians if bacon is omitted.

 
 
 
 

Ingredients

Choose 6 of the following (to make 150g in total):,25g (1 rasher) lean bacon chopped small,25g (1/4 small) chopped onion,25g (1/2 med) peeled chopped carrot,25g (1/2 stick) celery chopped into dice,25g (3 small) sliced mushrooms,25g (9 small) mange tout sliced,25g (1 tablespoon) sweetcorn or peas,25g (3 small florets) cauliflower / broccoli,25g (1/4 small) red or green pepper chopped into dice,25g tinned red kidney beans,25g your own choice,,1 tablespoon oil,1 small can (227g) chopped tomatoes,50g dried noodles or small shaped pasta,1 stock cube,salt & pepper,,25g grated cheese to sprinkle on top (optional),

Method

1. Make sure that all vegetables are washed, peeled and chopped to about the size of peas (except the mushrooms and mange tout which can be sliced). Chop bacon into pea sized pieces too.
2. Crumble stock cube into a jug and add 200ml boiling water
3. Heat oil in a saucepan until a piece of veg or bacon sizzles in it. Add bacon and veg and sauté for a couple of minutes.
Remove from heat.
4. Add tinned tomatoes + juice, pasta, stock, and pepper
5. Put pan back on heat; bring to boil then reduce heat to simmer for 20 minutes, stirring occasionally.
Add extra water if it becomes a bit too dry. Taste and season with salt and pepper if necessary
6. Spoon in to cup or bowl and sprinkle with grated cheese if you wish. Enjoy!!
