Pork a la Creme

This one has proved to be quite popular for occasions when you want something easy when you're entertaining friends and family.

 
 
 
 

Ingredients

Method

INGREDIENTS:

2 lbs. tenderloin or pork fillet (tenderloin gives the best results).
2 tablespoons oil.
2 oz. butter.
1 chopped onion.
1 ½ tablespoons of paprika.
1 tablespoon plain flour.
¾ pint of stock (I use Knorr Touch of Taste concentrated liquid chicken stock, or perhaps the Marigold Vegetable Bouillon powder).
7 tablespoons sherry.
2 teaspoons of tomato puree.
Season with salt & pepper.
8 oz. small button mushrooms (I usually do about 12 oz).
1 tablespoon cornflour.
5 fluid oz. double cream (or I use half fat crème fraiche for healthy option).

METHOD:

1. Cut fillet into 1 1/2 inch pieces. (They reduce in size a little when cooked).

2. Heat oil in pan and add butter.

3. Fry pork quickly (a few at a time) until just brown and remove from pan and drain.

4. Fry onion and paprika for 2 minutes. Blend in flour and cook
for a further 1 minute.

5. Remove from heat and blend in stock and add sherry and
tomato puree. Return to the heat and simmer until thick. Season
with salt and pepper.

6. Now add the meat to the pan. Cover and simmer very gently for 30 minutes until tender. Or you can do this in the oven on a low heat until tender.

7. Near the end of the cooking, add mushrooms to pan and cook for a little while.

8. Blend cornflour to smooth paste with 2 tablespoons of cold water and add to pan. Reboil until thickened.

9. Just before serving remove from the heat and blend in cream to warm through.
