Oven Fried Chicken Thighs in home made Mayo.

with veg of your choice or salad



chicken thighs skinned, fromage frais mayo , dry breadcrumbs, salt fresh ground pepper, oil spray,


(1) preheat oven to gas mk. 5
dredge the thighs with mayo ( spread it thickly on the skinned side ) then coat the skinned-side thickly with seasoned breadcrumbs
(2) put on a rack, on a foil-lined baking sheet and spray lightly with oil.
bake for 40-50 mins.
To make the fromage frais mayo
17 oz carton very low-fat fromage frais
1 tbsp. balsamic vinegar
1 tsp. dijon mustard
salt and fresh ground pepper
put all ingredients in a bowl and whisk well to combine.
refrigerate until needed
