Grease and line a 500g loaf tin
Melt butter in a pan. Fry onion for 5 mins
Add carrot and celery.Cook for 10 mins
Remove from heat add pine nuts, parsley, lemon and eggs
Season with nutmeg, salt and pepper
Pour into tin and bake for 40 mins until golden brown and firm in the centre

Nut roast

Great with gravy and roast potatoes. If you were doing it for a dinner party you could make a red wine and mushroom sauce to make it posher
Ingredients
25g butter,1 finely chopped onion,225g grated carrots,2 celery sticks finely chopped,225g pine nuts chopped finely,2 tbsp chopped parsley,lemon juice (good squeeze),2 eggs,nutmeg
Method
preheat oven to 180'CGrease and line a 500g loaf tin
Melt butter in a pan. Fry onion for 5 mins
Add carrot and celery.Cook for 10 mins
