Cut the meat into 1 cm cubes and mix with the marinade - leave for at least 1 hour.
Thread the meat onto wooden (bamboo) skewers, leaving a gap between each piece.
Cook over hot coals (e.g. barbeque) or under a hot grill, turning frequently until browned.

Indonesian meat sate

Can be served over plain rice. A little minced garlic and ginger in the dipping sauce is also good, if you don't mind 'garlic breath'!
Ingredients
450g mutton (or lamb/beef),For the marinade:,1 medium onion chopped; ,2.5 cm piece of ginger; ,2 red chillis; ,1 tbls lemon juice; ,2 tbls dark soy sauce; ,1 tbls dark brown sugar; ,1 tbls oil,,For the dipping sauce:,1 small onion finely chopped; ,4 tbls dark soy sauce; ,Juice of 1 lemon; ,3/4 tsp hot pepper sauce; ,black pepper
Method
Blend or grind all the marinade ingredients to a smooth paste.Cut the meat into 1 cm cubes and mix with the marinade - leave for at least 1 hour.
