Golden Parmesan Chicken
served this with diced roast pots, diced sweet potatoes and green beans, but this would be lovely with a big green salad as well.
MethodCut chicken into good sized chunks. Mix together the breadcrumbs parmesan and parsley in a shallow dish. Season with salt and pepper.
Dip the chicken in the beaten egg then into the breadcrumb mixture. Place in a single layer on a baking sheet and chill in the fridge for 30 minutes. (Don’t waste any leftover breadcrumb mix - just put in the pan and cook it as well - too yummy to not use)
Meanwhile make the garlic mayo. Mix together all ingredients.
Preheat the oven to 180C. Drizzle the melted butter over the chicken and cook for about 20 minutes until crisp and golden
