Add the garlic and chilli and stir-fry for 20 seconds.
Add the chicken and stir-fry until the meat has cooked.
Mix together the oyster sauce, chiken stock, soy sauce and sugar and add to the pan. Allow sauce to thicken slightly.
Add the torn basil leaves and serve, with a few slices of chilli as garnish.

Fried chicken with chilli and basil (Gai Phad Kaprao)

Ideal for a quick meal, served with fragrant rice.
Ingredients
3 tbls oil; ,1 garlic clove (chopped); ,5 small red chillis; ,300g chicken thinly sliced; ,1 tbls oyster sauce; ,1 tbls fish sauce; ,1 tbls dark soy sauce; ,5 tbls chicken stock; ,1 tbls sugar; ,Fresh (thai) basil leaves.,
Method
Heat the oil in a wok or heavy based pan over a medium-high heat.Add the garlic and chilli and stir-fry for 20 seconds.
Add the chicken and stir-fry until the meat has cooked.
Mix together the oyster sauce, chiken stock, soy sauce and sugar and add to the pan. Allow sauce to thicken slightly.
Add the torn basil leaves and serve, with a few slices of chilli as garnish.
