Fish and Chip Pie

25g butter,1 onion finely chopped,25g flour,300 ml milk,2 tomatoes skinned and quartered,1 tsp capers chopped,100 g frozen peas,black pepper and a little salt,450 g cod fillets,675 g potatoes peeled,2 tbsp oil,1 tbsp lemon juice


Preheat the oven to 200C, 400F, Gas 6. Gently melt the butter in a medium-sized saucepan and fry the onion until softened. Add the flour and cook for 1 further minute. Gradually add the milk, stirring continuously until the sauce thickens and comes to the boil. Add the tomatoes, capers, peas and seasoning.

Skin the cod fillets and cut into chunks. Stir into the sauce.

Turn into shallow oven-proof dish.

Cut potatoes into matchstick-sized chips. Place in a saucepan and pour over boiling water. Bring back to the boil and cook for 3 minutes. Drain. Stir in the oil and lemon juice and season.

Spoon chips over the fish mixture. Bake for about 35 minutes until golden.
