Coronation Chicken (Mary Berry)

Mum and I poach the chicken or cook it in the pressure cooker as it keeps it lovely and moist.



1lb cooked chopped chicken...,1 small onion chopped...,1 tablespoon tomato puree...,2 tablespoon lemon juice...,1/4-1/2 pint Hellemans mayonnaise...,1/2 clove garlic...,1/2 teaspoon curry powder(or paste),2 tablespoon apricot jam...,8oz stoned halved grapes...,1 1/2 oz browned flaked almonds...,,


Put onion, garlic, tomato puree, jam in a small pan and bring to the boil... slowly stirring all the time. Add 1/2 lemon juice.

Reduce to a puree in the food processor (I don't).

Blend with mayonnaise in a bowl and when *COLD* stir in cold chopped chicken. Chill overnight in the fridge (obviously).

Toss grapes in reamining lemon juice and stir into the mixture.

Garnish with watercress or parsley and toasted almonds.
