Chilli con Carne

Serve with either plain boiled rice or tacos. Grated cheese is nice sprinkled on top. Enough for three hungry people!



454g. minced beef; 2 medium onions peeled and chopped; 1 green pepper de-seeded and chopped; large tin of tomatoes chopped; 5 fluid ozs. hot beef stock; 1 fresh red chilli de-seeded and finely chopped 1 level tsp paprika 400g. tin kidney beans rinsed and drained 2 squares of dark 85% chocolate salt and pepper to taste.


Cook mince gently in a large saucepan so that the fat runs out and the meat goes a nice brown colour. Stir in the onions and green pepper and simmer for a few more minutes. Stir in the red chilli, paprika, tomatoes and hot stock. Bring to the boil. Turn down heat and cook gently for 45 minutes, stirring occasionally. At the end of that time, add the chocolate and stir until completely dissolved. Add the beans and cook for a further 15 minutes. Taste and add salt and peper if needed.
