Chicken Tikka MASALA - serves 4

garnish with fresh coriander, yoghurt and toasted cumin seeds and serve withon naan bread



675g chicken boobs skinless cubed,6tbsp tikka paste,120ml natural yoghurt,1 tbsp oil,1 onion chopped,1 clove garlic crushed,1 fresh green chilli deseed and finely chopped,2.5cm piece of fresh ginger grated,1 tbsp tom puree,250ml water,a knob of butter/ghee,1tbsp lemon juice,,FOR GARNISH,,natural yoghurt,fresh coriander toasted cumin seeds and naan bread


mix 3 tbsp of the tikka paste and 4 tb sp on the yoghurt into a bowl and add teh chicken...amrinate for 20 mins,

heat the oil in a heavy pan, and fry the onions, garlic, chilli and ginger for 5 mins...add the remaining tikka paste and fry for 2 mins...stir int he tom puree and water, bring to the boil and simmer for 15 mins.

meanwhile thread the chicken pieces onto skewers, preheat the grill/bbq...

brush the chcken pieces lighly with the melted butter/ghee and cook uner/over a moderate heat for 15 mins turning occassionally.

put the tikka sauce into a food processor and process until smooth, return to the pan.

add the remaining yoghurt and the lemon juice and the grilled (broiled) chocken from the skewers to the pan and then simmer for 5 mins.
