Heat vegetable oil in a deep frying pan & when hot add chicken (set marinade aside for later). Cook until lightish brown. Drain & set aside.
In a large-ish pan, pour 1 tsp extra virgin olive oil & cook onions until translucent. Add chicken, the marinade & enough water to cover the chicken. Mix well then allow to bubble then lower heat and simmer gently for 25-30 minutes.

Ingredients
chicken (legs thighs) or whole chicken cut into parts,sunflower oil,1 onion chopped,extra virgin oilive oil,water,,for marinade:,soy sauce (I'd recommend Kikkoman),malt vinegar,bay leaves (2),2 cloves garlic crushed,1 tsp sugar,peppercorns
Method
Combine ingredients for marinade in a bowl then add chicken. Cover the bowl, put in refridgerator for at least 30 minutes.Heat vegetable oil in a deep frying pan & when hot add chicken (set marinade aside for later). Cook until lightish brown. Drain & set aside.
