Chick pea burgers

In rolls with lots of salad

 
 
 
 

Ingredients

1 x 400g tin chickpeas,4oz pine nuts,1/2 bunch spring onions,1 grated carrot,1 grated eating apple,2tbsp tomato puree, 1 tbsp wholegrain mustard,1 beaten egg,1 tbsp chopped fresh parsley,,

Method

Mash chickpeas in a bowl
Dry fry pine nuts for 1 min until golden
Add nuts, spring onions, carrot, apple, tomato puree, mustard, egg and parsley to chick peas
Salt and pepper
Shape mixture into 8 small burgers
Chill for 30 mins
Grill burgers for 6-8 mins turning once
