250g beef mince,1 small onion finely chopped,150g carrots grated.,40g cheddar cheese (or cheese of choice) cut into 8 equal squares.,4 tomaotes,300g brocolli,1 jar (340g) any tomato pasta sauce

pre heat oven to 200c, 400f, gas 6.

put the mince in a large bowl and add the finely chopped onion and grated carrot, and with your hands mix it all together.

divide the meat mix into 8 equal sized balls and press a cube of cheese into the centre of each meatball.

Place on a baking tray and cook for 20 mins until cooked through.

cube the tom's and break the brocolli into florets, and add the the pasta sauce and cook for 10 mins, so there is still some bite to the brocolli.

Serve with the meatballs, and serve with pasta or mashed spuds.
