Cheese, pasta and mushroom frittata

Serve warm or at room temperature Serve with salad You can use all sorts in this frittata -ham, peppers etc Be Creative!



75g cooked pasta (not too big -macaroni size is ideal),75g mushrooms,1 garlic clove finely chopped,5 large eggs,75g grated cheese,handful fresh basil


Saute mushrooms and garlic in a little oil till soft.
Remove from pan
Beat eggs in bowl. Add mushroom,garlic, cheese, basil and pasta. Season
Put frying pan on medium heat
Add frittata mixture and cook for 8-10 mins until almost set
Preheat grill
Place pan under grill for 4-5 mins until golden brown and set
Leave to set in the pan for 5 mins then slide out of pan
Cut into wedges
