Cheese and Herb Fritters with Sweet Pepper Marmalade

Serve with the sweet pepper marmalade and a green salad-Scrummy!!!



110g Feta,110g Gruyere,110g Mature Cheddar,3 heaped tbs of chopped mixed herbs (basil thyme oregano parsley) whatever you have,50g p flour,1dsp seasoned flour,2 pinches cayenne,2 eggs,2tbs milk,3 tbs olive oil,seasoning,SWEET PEPPER MARMALADE,2 large red peppers sliced into 1 pieces,1tbs olive oil,1 onion peeled and crushed,2tbs dark brown soft sugar,3tbs cider vinegar,225ml medium cider,seasoning


Sift flour and cayenne into a large bowl, season and gradually whisk in eggs.
Whisk in miilk until you have a smooth batter.
Gradually stir in grated cheeses and herbs.
Cover and leave in fridge for an hour.
Now for the marmalade:
Heat oil in saucepan, when hot add onion and peppers.
Cook until golden brown - 10 mins or so.
Add garlic and cook for a minute.
Add the sugar, cider vinegar and cider, stir and bring to a simmer.
Season turn down heat to its lowest and simmer uncovered for 11/4 hrs until liquid nearly evaporated and you have your marmalade
Now cook fritters:
Take 1 tbs of mixture and make 12 rounds, flatten and dust with seasoned flour.
Heat oil in pan highish setting, cook half the fritters over a medium heat for about 50-60 seconds each side until golden and crispy.
Lift them out of pan and drain on kitchen paper.
Keep warm and do second batch.
