Cheese And Potato Pie

Serves 4 - 6 Serve immediately with grilled bacon and tomatoes. This dish can be made earlier in the day and cooked later. If so, allow a few minutes extra baking time. Instead of serving in one large dish, we like it served in buttered individual dishes occassionally, when having it on it's own.



1 1/2 - 2lbs plain mashed potatoes ,2oz butter or hard margerine ,1lb grated strong mature cheddar cheese ,1/4 teaspoon dried English mustard powder ,1/4 teaspoon cayenne pepper ,2 small beaten eggs ,a little milk ,


1 Butter a large casserole.
2 Add the margerine to the mash and beat well.
3 Add the beaten eggs and beat well.
4 Add 14oz of the grated cheese, nustard powder and cayenne pepper, beat well.
5 The mixture should resemble a soft dropping consistency (the mixture will fall off the spoon easily without shaking), if too dry add a little milk.
6 Pour into the greased casserole dish.
7 Level with a spatula.
8 Sprinkle over the remaining 2oz grated cheese.
9 Bake at 190 degrees centigrade/gas 5 for 15 to 20 minutes or until bubbling and golden brown,.
