Cheats Risotto

Oven baked....quick & tasty.....



1 litre chicken stock,25g butter,1 onion peeled & chopped,300g risotto rice,Salt & pepper,1 sachet of Seeds of Change pesto sauce,Goats cheese or Parmesan


Preheat oven to 160ºCircotherm, 375F/Gas 5
Melt butter in pan, add onion and fry for a few mins.
Add rice and stir for about 1 min.
Pour in boiling chicken stock.
Add seasoning, cover and cook in oven for 25 mins.
Remove from oven and add sachet of pesto and knob of butter and mix through.
Sprinkle parmesan or dollops of goats cheese on top.
