Cheats Puttanesca sauce
This is my cheats version of Delia's recipe. Apologies to Delia, but I reckon it's as good as hers. Certainly easier, and as a bonus, it uses a healthy oily fish.
Ingredients
1 can chopped tomatoes in juice
1 can mackerel fillets in tomato sauce
½ small jar black olives – or as many as you like – I love olives
1 tbsp capers, drained and rinsed
½ tsp dried Basil
½ tsp chili powder
½ tsp dried garlic
Dash of fish sauce – but only if you have it in the cupboard
Squirt of tomato ketchup
Black pepper
Method
This is the easiest to make, and one of my big time favourites.
Simply put the can of tomatoes and the mackerel fillets in their sauce in a saucepan. Add the olives, cut into quarters, the capers and everything else.
On the lowest heat, let it get to the blupping stage, stirring well to break up the mackerel.
Have a quick taste and add extra chili if you like to spice things up even more. No salt at all needed.
Let it blup away on the lowest heat until it’s thick and unctuous.
Toss into cooked spaghetti, or whatever your favourite pasta may be, with plenty of parmesan cheese on top.
Also makes a wonderful sauce for home made pizza, only needs slices of Mozzarella on top before cooking in the oven.
