Cajun Style Chicken with Creole Rice (BBQ)
My take on this dish (serves 4) This dish can be served immediately, or allowed to cool down, perfect for those long hot summers, or separately as part of a picnicbbq. The chicken breasts can be chopped into bite size pieces or strips, and the rice will go a long way as an accompianment. goes well in lunch boxes aswell.
MethodFor the Chicken
preheat oven to 200c/gas 6. mix the spices together and toss in the chicken breasts, till they are fully coated in spice mix. Drizzle the oil over a baking sheet, add the chicken and bake for 15-17 mins (depending on your oven - till cooked).
For the Rice
Cook the rice as per instructions and cool completely in cold water. Heat oil in large pan/wok and add the pepper, cook for 5 mins, add the salad onions and cook for 2 mins, add the garlic and spices and cook for 1 min. stir in the rice, sweetcorn and kidney beans and continue to cook until warmed through thoroughly.
